Congealed Cherry Salad

I make this every year during the Thanksgiving/Christmas holidays. It has been a favorite at our house ever since we first had it at B's aunt's house.

Congealed Cherry Salad

1 16 oz. can pitted dark sweet cherries, undrained * Save juice from all fruit.*
1 11 oz. can mandarin oranges, undrained
1 8 oz. can crushed pineapples, undrained
1 6 oz. package cherry Jello
1 cup cold water
1/2 cup chopped pecans (optional, but it really makes the dish, to me)
--Drain all fruit into a large bowl, combining and reserving enough juice to measure 1 1/2 cups. Set fruit aside. Bring reserved juice to a boil. Dissolve jello in boiling juice. Add cold water. Chill until the consistency of unbeaten egg white. ( I set a timer to check it every thirty minutes.) Fold in fruit and pecans. Pour mixture into glass or crystal bowl. Cover and chill until firm.

Hi Jenna - I tried to comment on your other blog, but couldn't get into the comments (?) - so came over here. Thanks for visiting my site - always nice to meet other mother's of twins (there are a lot out there). Mine have always been in public school (we live in one of the best school districts in Texas) - so I don't know that I should/could give advise on whether to keep them in school or pull them back home. I give you a lot of credit (!) for home schooling your kids. I would say (should you ask) - give it a little more time. While home schooling has huge benefits - so do public/private schools. My kids have thrived in public schools (but it is all they have ever known). Homework is common - I can tell you that. And, it may get even worse (if my kids are any example). Good luck making this decision - you'll do what's best for "your" kids. That's all you can do - trust your instincts and pray. Thanks again for visiting my site - come back again soon.

We tried your Mexican soup last night. It was great. And the baked spaghetti is one of my new favorites.
